How to Make Soup with Pork Ribs and Mustard
- Preparation of ingredients. Cut the pork ribs into portions. Peel and cut the potatoes into cubes. Finely chop the carrot and onion. Cut the pickles into cubes.
- Preparation of the broth. Cover the ribs with cold water (about 2 liters) and put on the fire. After boiling, remove the foam, add bay leaf, peppercorns and cook over low heat for about 1.5 hours.
- Frying the vegetables. Fry the onion in vegetable oil until golden, add the carrot and continue frying for another 5-7 minutes. Then add the chopped pickles and stew everything together for another 5 minutes.
- Assembling the pickle soup. Add the potatoes to the broth and cook for 10-15 minutes. Then add the fried vegetables and pickles, mustard, pickle juice and cook for another 10 minutes.
- Serving. Check the readiness of the potatoes and meat, salt to taste. Before serving, add finely chopped greens.
