How to Make Small Perch with Scales in the Oven

  1. Fish preparation. Clean the perch from the insides, but do not remove the scales. Rinse the fish under cold water and pat dry with paper towels.
  2. Marinade preparation. Mix olive oil, juice of half a lemon, salt, and pepper.
  3. Fish marinating. Coat the fish with the prepared marinade both inside and outside. Leave it for 15-20 minutes to marinate.
  4. Oven preparation. Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
  5. Baking. Place the perch on a baking tray lined with parchment paper. Bake in the oven for about 20-25 minutes or until golden brown.
  6. Serving. Serve the fish hot, garnished with herbs and slices of the remaining lemon.
