Cherries in Wine

How to Make Cherries in Wine
- Preparing the cherries. Choose ripe but firm cherries. Remove the pits without damaging the fruits. This can be done with a special device for removing pits or with a thin straw.
- Making the syrup. Pour the wine into a saucepan, add sugar, cloves, cinnamon, and lemon zest. Put it on the heat and bring it to a boil, then reduce the heat and simmer for another 5 minutes.
- Adding the cherries. Add the cherries to the hot syrup, stir and bring to a boil. Then reduce the heat to a minimum and simmer for another 10-15 minutes until the cherries become soft but do not fall apart.
- Cooling. Remove the saucepan from the heat and let the cherries in wine cool to room temperature.
- Serving. Serve the cherries in wine cold, after chilling in the refrigerator. The cherries can be served as a standalone dessert, or as an addition to ice cream or pie.
