How to Make Cherries in Wine

  1. Preparing the cherries. Choose ripe but firm cherries. Remove the pits without damaging the fruits. This can be done with a special device for removing pits or with a thin straw.
  2. Making the syrup. Pour the wine into a saucepan, add sugar, cloves, cinnamon, and lemon zest. Put it on the heat and bring it to a boil, then reduce the heat and simmer for another 5 minutes.
  3. Adding the cherries. Add the cherries to the hot syrup, stir and bring to a boil. Then reduce the heat to a minimum and simmer for another 10-15 minutes until the cherries become soft but do not fall apart.
  4. Cooling. Remove the saucepan from the heat and let the cherries in wine cool to room temperature.
  5. Serving. Serve the cherries in wine cold, after chilling in the refrigerator. The cherries can be served as a standalone dessert, or as an addition to ice cream or pie.

Enjoy your meal!
