Ingredients

  • 400g beef (preferably with bones), 
  • 2 medium beets, 
  • 1 large carrot, 
  • 1 large onion, 
  • 2-3 medium potatoes, 
  • 1 medium apple, 
  • 1 small bell pepper, 
  • 1/2 cup buckwheat, 
  • 2 tbsp vegetable oil (for frying), 
  • 2-3 cloves of garlic, 
  • 2 bay leaves, 
  • Salt and pepper to taste, 
  • 1-2 tbsp vinegar (optional), 
  • 1-2 tbsp sugar (to taste), 
  • 2-3 tbsp tomato paste, 
  • Fresh herbs (dill, parsley) for serving, 
  • Sour cream for serving, 
  • Some bacon for frying

How to Make Chernihiv Borscht Recipe

  1. Prepare the Ingredients
    • Cut the beef into medium-sized cubes. 
    • Peel and dice the beets, carrots, onions, and potatoes. 
    • Peel and dice the apple. 
    • Chop the bell pepper into small pieces. 
    • Rinse the buckwheat in cold water and drain.
  2. Saute the Ingredients
    • Heat the vegetable oil in a large pot. Add a small piece of bacon for flavor and fry until the fat starts to render. 
    • Add the onion and garlic, sauté until softened. 
    • Then add the carrots and beets, sauté for a few minutes until the vegetables are softened. 
    • Add the beef and fry until browned.
  3. Cook the Borscht
    • Add the diced potatoes to the pot. 
    • Pour in enough boiling water to cover all the ingredients and bring to a boil. 
    • Once boiling, add the buckwheat and simmer over medium heat until the meat and potatoes are cooked through (usually about 20-30 minutes). 
    • When the borscht is almost ready, add the diced apple and bell pepper. 
    • Finally, add the tomato paste, stir well, and let it simmer for another 5-7 minutes. Taste for salt and pepper, and adjust seasoning if necessary. 
    • Optionally, add vinegar and sugar to balance the flavors.
  4. Serving
    • Serve the borscht hot, garnished with fresh herbs and a dollop of sour cream in each bowl. 
    • You can serve it with sliced black bread or garlic croutons.
