Ingredients

  • 1 whole chicken (about 3-4 pounds), 
  • 1.5 cups of long-grain rice, 
  • 3 cups of chicken broth, 
  • 2 tablespoons of olive oil, 
  • 1 onion, chopped, 
  • 2 cloves of garlic, minced, 
  • 1 carrot, chopped, 
  • Spices to taste (pepper, salt, paprika, thyme, etc.), 
  • Fresh herbs for garnish (parsley, basil, etc.)

How to Make Chicken with Rice in the Oven

  1. Prepare the Chicken:
    • Rinse the chicken under cold water and pat it dry with paper towels. 
    • Season the chicken with salt, pepper, and any other spices you prefer.
  2. Prepare the Rice:
    • Rinse the rice under cold water until the water runs clear. 
    • Prepare the chicken broth and bring it to a boil.
  3. Chicken Stuffing:
    • Heat a skillet over medium heat and add olive oil. 
    • Sauté the onion and garlic until softened. 
    • Add chopped carrots and sauté for another 2-3 minutes. 
    • Add the rice and sauté until it becomes slightly translucent. 
    • Transfer the stuffing to a deep baking dish.
  4. Stuffing the Chicken:
    • Fill half of the chicken with the prepared stuffing. 
    • Cover the chicken with the remaining stuffing.
  5. Baking:
    • Preheat the oven to 350°F (180°C). 
    • Place the chicken in a baking dish and pour in the chicken broth. 
    • Cover the baking dish with foil and place it in the oven. 
    • Bake the chicken for approximately 1.5-2 hours, removing the foil periodically and basting the chicken with juices.
  6. Checking for Doneness:
    • Check the chicken's readiness by piercing it between the thigh and breast with a knife. If the juices run clear, the chicken is done. 
    • Serve the chicken garnished with fresh herbs, and carve it into serving pieces.
