How to Make Stuffed Zucchini Rings
- Preparation of ingredients. Wash the zucchini, trim the ends, and cut into rings about 2 cm thick. Peel and finely chop the onion and carrot. Peel the garlic.
- Preparation of the minced meat. In a deep frying pan over medium heat, fry the onion until golden. Add the carrot and fry for another 5 minutes. Then add the minced meat, salt, pepper, and garlic passed through a press. Mix everything well and stew until the minced meat is ready.
- Stuffing the zucchini. Scoop out the middle of the zucchini rings with a spoon, leaving "walls" about 0.5 cm thick. Fill the resulting "cups" with the prepared minced meat.
- Frying the zucchini. Heat the vegetable oil in a frying pan. Fry the zucchini on both sides until golden. Then add the tomato paste or sauce, a little water, reduce the heat to a minimum, cover the pan with a lid, and simmer for 10-15 minutes.
- Serving the dish. Place the ready zucchini on a dish, sprinkle with finely chopped greens, and serve hot.
