Juicy zucchini filled with flavorful minced meat, fried to a golden crust and stewed in tomato sauce - a perfect option for lunch or dinner. This recipe is easy to prepare and does not require special culinary skills.


  • Zucchini - 2 pcs., 
  • Minced meat (pork, beef, or chicken) - 300 g, 
  • Onion - 1 pc., 
  • Carrot - 1 pc., 
  • Garlic - 2 cloves, 
  • Salt, pepper - to taste, 
  • Tomato paste or sauce - 2 tbsp., 
  • Vegetable oil - for frying, 
  • Greens (dill, parsley) - for serving

How to Make Stuffed Zucchini Rings

  1. Preparation of ingredients. Wash the zucchini, trim the ends, and cut into rings about 2 cm thick. Peel and finely chop the onion and carrot. Peel the garlic.
  2. Preparation of the minced meat. In a deep frying pan over medium heat, fry the onion until golden. Add the carrot and fry for another 5 minutes. Then add the minced meat, salt, pepper, and garlic passed through a press. Mix everything well and stew until the minced meat is ready.
  3. Stuffing the zucchini. Scoop out the middle of the zucchini rings with a spoon, leaving "walls" about 0.5 cm thick. Fill the resulting "cups" with the prepared minced meat.
  4. Frying the zucchini. Heat the vegetable oil in a frying pan. Fry the zucchini on both sides until golden. Then add the tomato paste or sauce, a little water, reduce the heat to a minimum, cover the pan with a lid, and simmer for 10-15 minutes.
  5. Serving the dish. Place the ready zucchini on a dish, sprinkle with finely chopped greens, and serve hot.
