Preparing the dough: In a large bowl, mix the flour and salt. Add the egg and water, then knead the dough. If the dough is too dry, add a little water. If it's too wet - add flour. The dough should be elastic and not stick to your hands. After kneading, leave the dough for 20-30 minutes, covering it with a towel.
Preparing the filling: Finely chop the sausage and onion or pass them through a meat grinder. Add salt and pepper to taste and mix well.
Forming the dumplings: Divide the dough into several parts. Roll each part into a thin layer. Using a glass or mold, cut out circles. Put a small portion of the filling on each circle. Fold the circle in half, then pinch the edges, forming a dumpling. Make sure the edges are well pinched so that the filling does not leak out during cooking.
Cooking the dumplings: In a large pot, bring water to a boil. Add a little salt. Put the dumplings in boiling water and cook them for 5-7 minutes after they float to the surface.
Serving: Serve the dumplings hot, sprinkled with fresh dill or parsley. They go great with sour cream or mayonnaise.
